Physicians Committe for Responsible Medicine is at the forefront of medical - or should I say health - research regarding diet. Consider the following findings regarding the vegan diet and the implications for our health and global health expenditure.

Arthritis

One 2002 study looked at the influence of a very low-fat vegan diet on subjects with moderate-to-severe RA. After only four weeks on the diet, almost all measures of RA [arthritis] symptoms decreased significantly. Link

Calcium and Osteoporosis

… in a 12-year Harvard study of 78,000 women, those who drank milk three times a day actually broke more bones than women who rarely drank milk.1 Similarly, a 1994 study of elderly men and women in Sydney, Australia, showed that higher dairy product consumption was associated with increased fracture risk. Those with the highest dairy product consumption had approximately double the risk of hip fracture compared to those with the lowest consumption…

The most healthful calcium sources are green leafy vegetables and legumes, or “greens and beans” for short. Link

Cancer

When cancer researchers started to search for links between diet and cancer, one of the most noticeable findings was that people who avoided meat were much less likely to develop the disease. Large studies in England and Germany showed that vegetarians were about 40 percent less likely to develop cancer compared to meat eaters. Link

Instead of struggling—and often failing—to cure established cancer, a large body of data now shows that cancer can be prevented. The National Cancer Institute estimates that as much as 80 percent of cancer cases can be prevented. Link

Diabetes

A 2006 study, conducted by the Physicians Committee for Responsible Medicine with the George Washington University and the University of Toronto, looked at the health benefits of a low-fat, unrefined, vegan diet (excluding all animal products) in people with type 2 diabetes.5 Portions of vegetables, grains, fruits, and legumes were unlimited. The vegan diet group was compared with a group following a diet based on American Diabetes Association (ADA) guidelines. The results of this 22-week study were astounding:

  • Forty-three percent of the vegan group and 26 percent of the ADA group reduced their diabetes medications. Among those whose medications remained constant, the vegan group lowered hemoglobin A1C, an index of long-term blood glucose control, by 1.2 points, three times the change in the ADA group.
  • The vegan group lost an average of about 13 pounds, compared with only about 9 pounds in the ADA group.
  • Among those participants who didn’t change their lipid-lowering medications, the vegan group also had more substantial decreases in their total and LDL cholesterol levels compared to the ADA group. Link

Heart Disease

Dean Ornish, M.D., of the University of California at San Francisco, has shown that if people who have advanced heart disease adopt a low-fat vegetarian diet, stop smoking, reduce stress, and engage in mild daily exercise, the plaques in their arteries will actually start to disappear.

Coronary artery bypasses and heart transplants, while helpful for some patients, have not matched the potency of dietary and other lifestyle measures. Bypasses and transplants develop aggressive atherosclerosis unless strict dietary steps are taken. Clearly, medicine’s best strategy is to institute such steps while the patient is still healthy. Hypertension (high blood pressure)

People who follow vegetarian diets typically have lower blood pressure.

No one knows exactly why these foods work so well, but it is probably because cutting out meat, dairy products, and added fats reduces the blood’s viscosity (or “thickness”) which, in turn, brings down blood pressure.5 Plant products are generally lower in fat and sodium and have no cholesterol at all. Vegetables and fruits are also rich in potassium, which helps lower blood pressure. Link

Prostate Cancer

Could milk cause prostate cancer? Here are the facts: Major studies suggesting a link between milk and prostate cancer have appeared in medical journals since the 1970s. Two of six cohort studies (research studies following groups of people over time) found increased risk with higher milk intakes. Five studies comparing cancer patients to healthy individuals found a similar association. One of these, conducted in northern Italy, found that frequent dairy consumption could increase risk by two and one-half times.1

In 1997, the World Cancer Research Fund and the American Institute for Cancer Research concluded that dairy products should be considered a possible contributor to prostate cancer. And yet another research study came out in April 2000 pointing to a link between dairy and prostate cancer: Harvard’s Physicians’ Health Study followed 20,885 men for 11 years, finding that having two and one-half dairy servings each day boosted prostate cancer risk by 34 percent, compared to having less than one-half serving daily.
